The Roagna family is one of those families that has made and continues to make the history of Langhe winemaking, a firm believer in a respectful approach to the vineyard and the environment in general. To pursue the making of wines that are stories of their place of origin, the use of any chemical or synthetic substances in the vineyard is banned, while in the cellar, fermentations take place spontaneously and without the liquids being clarified or filtered. Today the family holdings number 12 hectares planted with vines, spread among some of the best areas of Barolo and Barbaresco, and with the ownership of some plots monopolized by the winery.

The "Pajè" wine comes from pure Nebbiolo grapes from a single historic vineyard owned by the Roagna family since 1953. The high concentration of limestone and the average age of the vines, which is between 40 and 50 years old, allows the production of very high-quality grapes, which are harvested manually in October with double sorting of the grapes. Fermentation takes place spontaneously in large wooden barrels, with submerged cap maceration on the skins lasting about 2 1/2 months. Aged in large neutral oak barrels for 5 years, and no clarification or filtration before bottling.

The red "Pajè" has a ruby colour that declines towards garnet more sharply with age. Extremely typical and varied nose, it tastes of liquorice, cherry, dog rose, and tobacco, still testifying to the immense talent of Nebbiolo when vinified with such rigour. In the mouth, the wine reveals all its power and class, with the rhythm marked by a tight but very elegant tannin and an overflowing freshness.
