In the cellar of Castello di Verduno each procedure follows the precepts of tradition: after the hand-harvesting, the crushed Nebbiolo grapes undergo a long and intense maceration for 25 days within traditional wooden vats, effectively prolonging to the maximum the aromatic extraction from the skins after the end of fermentation. The long aging in large oak casks and in bottle ensures a complete development of this Barbaresco, already able in the first years of life to showcase its opulence. Everything that is, therefore, behind the production of the Barbaresco Rabajà, from field works to the real wine-making until the refining phase, follows a logic of minimal intervention, rejecting all forms of chemical in the vineyard and in the cellar: the preferences are only for a slow, patient and watchful care of the fruits, able to occur in excellent results when put in the condition to give their best.
