The vineyards are managed under biodynamic agriculture without using chemicals or additives. The Montepulciano vineyards are cultivated at 200 metres above sea level. At the end of the harvest, the grapes are softly pressed, and the must is vinified in white with a spontaneous fermentation using only indigenous yeasts.
