For years Pascal had been hatching the desire to become a négociant in Burgundy after decades spent as a 'flying winemaker' around the world. Moray, on the other hand, is the owner of one of the most important wineries in the Niagara area of Canada: the Tawse Winery. By combining their efforts, the two have created a very interesting production reality based on cornerstones such as quality and sustainability.\u003cbr\u003eThe Gamay Coteaux Bourguignons of the Marchand-Tawse winery is a pure Gamay cultivated according to the principles of organic farming on predominantly clay soil. In the cellar, the grapes are vinified whole with no less than \u003cstrong\u003e5 days of cold maceration\u003c\/strong\u003e, one punching-down per day at the start of alcoholic fermentation and periodic pumping-over during the maceration phase aimed at favouring a gentle extraction of the compounds contained in the marc. In total, the fermentation process lasts 15 days and the mass is then pressed and racked into used French oak barrels where it matures for 11 months. After a further 3 months of ageing in steel, bottling takes place and throughout the process the liquid does not undergo any clarification or filtration.\u003cbr\u003eTo the eye, the Coteaux Bourguignons Gamay of Maison Marchand-Tawse expresses a brilliant ruby red hue. On the nose, clean and fine hints of red-fleshed fruit emerge, combined with delicate spicy sensations.
