The vines were planted in 1998 and are, therefore, twenty years old; they are rooted in calcareous soils of medium structure, have Guyot training systems and face south. In keeping with the winery's values, the vineyard is managed according to the principles of organic and biodynamic agriculture, aiming to \" accompany the vine on its natural path without ever creating tension or stress\". In the cellar, vinification takes place in \u003c\/span\u003e\u003cstrong\u003e\u003cspan data-preserver-spaces=\"true\"\u003epyramid-shaped, unglazed concrete tanks\u003c\/span\u003e\u003c\/strong\u003e\u003cspan data-preserver-spaces=\"true\"\u003e, where the must ferments spontaneously in contact with the skins for about 40 days and takes on an intense golden colour. After decanting, malolactic fermentation also takes place spontaneously. Afterwards, the wine remains in contact with the fine yeast for several months and reaches maturity.\u003c\/span\u003e\u003c\/p\u003e\r\n\u003cp\u003e\u003cspan data-preserver-spaces=\"true\"\u003eInti is the orange wine of the Corte Sant'Alda winery, the result of a highly original \u003c\/span\u003e\u003cstrong\u003e\u003cspan data-preserver-spaces=\"true\"\u003eexperimental production method\u003c\/span\u003e\u003c\/strong\u003e\u003cspan data-preserver-spaces=\"true\"\u003e that refers to the past and ideally draws inspiration from pre-Columbian civilisations and their divine symbols in gold. This connection is suggested by the intense golden colour that characterises the wine and which is due to the long \u003c\/span\u003e\u003cstrong\u003e\u003cspan data-preserver-spaces=\"true\"\u003emaceration on the skins for 40 days\u003c\/span\u003e\u003c\/strong\u003e\u003cspan data-preserver-spaces=\"true\"\u003e, a number that also seems to recall the 40 days and 40 nights of Moses on Mount Sinai before he came down from the mountain and caught his people worshipping the idol of the golden calf, or the 40-year trek through the desert before they reached the land of Canaan.
